Today's recipe is the fish curry with coconut milk. This is yet another post which was in the drafts. Just like any other Malayali, I am a big fan of fish curries and fry. I love both the ones with coconut milk as well as the ones without. The ones without coconut milk usually tend to me more spicy.<br />

This is the fish curry I learnt from my mom-in-law and grandmother-in-law. When you have 2 mom in laws it can get a bit funny and weird sometimes in the kitchen :D what with both giving different instructions :P .... I used to be a bit worried as to who exactly to follow, not wanting to upset either of them. But I've learnt to balance them now :) My husband's grandmother has been quite an active person MashaAllah. But recently she has not been feeling that well... :(<br />

This is a pretty simple and easy fish curry in which you cut and put all ingredients in a pot (I use earthen pot for making fish curry mostly). Let it all cook in the fresh coconut milk... after 10-15 minutes you'd get a nice slightly thick gravy. Add in the cleaned and cut pieces of fish. Fish cooks pretty fast. Hardly 5-6 minutes. Your fish curry is ready. And boy, does it taste good!<br />
I usually do not do any tempering of curry leaves in the end. The curry leaves are added with all the ingredients.<br />

Fish curry is all about the different kinds of items you use to give the curry its tangy-ness. My mom in law uses both ripe and raw tamarind, Kudampuli (Gambooge), Irumban puli (Bilimbi) and Raw mango. Each of these give a different tangy taste and all taste excellent. What I use mostly here in Dubai is ripe tamarind or kudampuli. And tomatoes too add their own tangy taste. But the tomatoes we get in kerala are a lot more tangy than the ones we get here. So when my mom-in-law uses 1 small tomato there, I use 2 here.<br />

I love this curry a lot not only because its so yummy, but also coz its extremely easy to make. Just throw everything in and let it cook :)<br />
<br />
<b><u><i>Now here's what you'll need to make this curry:</i></u></b><br />
<ul>
<li>Shallots - a hanful chppoed (<i>I like adding a lot of this :)</i>)</li>
<li>Tomatoes - 1 big or 2 medium (<i>Like I explained above it depends on your tomato. Add whatever u feel necessary</i>)</li>
<li>1 green chilly</li>
<li>1/2 tbsp turmeric powder</li>
<li>3/4 tbsp chilly powder</li>
<li>Salt to taste</li>
<li>4 slices of kudampuli/ half a palm-full of ripe tamarind <i>(Check taste.. do not over do on these if you do not like a lot of tangy taste)</i></li>
<li>2 cups coconut milk <i>(made by grinding fresh coconut and water)</i></li>
<li>Curry leaves a handful</li>
<li>Fish of your choice (cleaned and cut into pieces)</li>

<b><i><u>How to make:</u></i></b><br />

<li>Take a deep bottomed pan add in the shallots, tomatoes, curry leaves, the kudampuli/ripe tamarind, turmeric powder, chilliy powder, salt, coconut milk and also an extra of 2 cups of water.</li>
<li>Let this mixture come to boil and then reduce flame and cook for 10-15 minutes until u can see the gravy thickening up. </li>
<li>Now check taste and then add in the fish. Fish cooks pretty fast. Let this cook for 5-6 minutes. Check the curry and switch off stove. </li>
</ul>

That's it! Your fish curry is ready. You can put the curry leaves along with all the ingredients or else you could temper it in coconut oil and add in at the end after curry is ready. I personally find adding all in one go creates a lot less mess to clean up :D</div>

- 1/4 tbsp garam masala<br />
- 4-5 tbsp (or the quantity you prefer) Sunflower/Coconut oil.<br />
<i>You can use any oil you would normally use for cooking.</i><br />
- 1/2 tbsp lemon juice (optional, but it adds lovely flavour)<br />
- Salt according to your taste<br />
- Curry leaves a little less than a handful<br />
- Coriander leaves for garnishing<br />

<b><i><u>How to make:</u></i></b><br />

<b><u>First:</u></b> Pour 1 tbsp of oil into a deep bottomed pan. Put in all the dry ingredients and roast for 3-5 minutes and then semi-grind them. I usually make use of fresh ingredients for making the garam masala.<br />
<b><u><br /></u></b>
<b><u>Next:</u></b> Pour another 3-4 tbsp of oil into the same pan and add in the chopped onions, ginger, garlic and curry leaves when the oil is hot. Let it cook for a few minutes until the onion starts turning slightly brown. Now add in the tomatoes. Let it cook until it turns mushy and oil starts seeping out of the gravy. Then add in the semi- ground dry ingredients. Let it all cook for 5 minutes then add in the chicken, lemon juice and salt. Mix it all together let that cook for another 2-3 minutes then add in 1 and 1/4 cups of water. Mix it. Cover the pan and bring to boil. Then let it simmer for 25-30 minutes or until the chicken is well cooking. Check taste and add in more pepper or salt according to your taste. Garnish with coriander leaves. Serve with ghee rice, chapati's or roti's...<br />
And you should always remember, as with all cooking, we have to get the right taste that our taste buds prefer. So you can always play around with how much of an ingredient you actually want to put in to a food u r preparing.<br />

<li> 2 -3 black tea bags (depending on how strong you like your tea)</li>

<li> 1/2 tsp ground nutmeg</li>
<li> 1" cinnamon</li>
<li> 1" ginger</li>
<li> 2 tablespoon honey </li>
</ol>

In a saucepan, bring the water and spices to a boil. Once the water reaches a boil, turn off the heat and allow the spices to steep in the water for 5 minutes. After 5 minutes, turn the heat back on and add the black tea bag and honey. Return to a slight boil and allow the tea bags to steep in the water and spices for 5 minutes. Remove the tea bags and strain the tea through a fine mesh strainer. </div>

In a saucepan, bring the milk, honey, and pinch of cinnamon to a boil, stirring often. Once the sides of the milk begin to bubble, remove the pan from heat. Using an blender, blend the milk until it's frothy. Even if you avoid this step (if you are in a hurry or can't be bothered with) it tastes awesome! </div>

Pour 3/4 cup of chai / tea in a mug. Slowly add the warm, frothy milk to the tea. Sprinkle the top of the chai latte with an extra pinch of cinnamon, if desired.</div>

This <i><b>delicious</b></i>, <i><b>mouthwatering</b></i> and <i><b>oh-so-amazingly satisfying food</b></i> was first introduced to me by the lady who came to look after me & Ehsaan after my second delivery. I had delivered a week or so before Ramadan. So I got to try out quite a lot of wonderful snacks prepared by her for breaking fast for my husband and my mom (who had come along from Saudi to help me). This is like a mix of chicken samoosa, chicken puffs and eggs without all the excess oil of puffs.<br />
It's soooo good I've made it quite a lot of times after that...<br />

<li>Chicken cleaned and cooked in pressure cooker with salt and pepper and then shredded once its cooled down.</li>
<li>2 to 3 big onions finely chopped</li>
<li>Half an inch chopped, crushed ginger</li>
<li>2-3 cloves of garlic, chopped and crushed</li>
<li>Pepper powder to taste</li>
<li>Turmeic powder 1/4 tsp</li>
<li>Garam masala 1/4 tsp</li>
<li>1 cup Maida</li>
<li>4-5 eggs</li>
<li>Water</li>
<li>Oil</li>
<li>Salt to taste</li>

I make the chicken filling the same as I would make for samoosas.<br />
<br />
<ul>
<li>Heat 2-3 tbsp oil in a sauce pan, add the chopped onions, crushed ginger & garlic</li>
<li>Let that cook for a minute or 2 until you see them going brown. Do be careful not to keep the flame too high which would burn them easily.</li>
<li>Add pepper powder, salt, garam masala and turmeric powder. Mix well</li>
<li>Now add the shredded chicken. Mix well. Check salt and spice. Add salt or pepper if needed</li>
<li>Cook for some 2-3 minutes on low flame and then keep aside.</li>
</ul>

Now there are two ways you can make the pathiri's/appam's one is the dough method and the other the batter method. I have only ever tried the batter one and as its so easy and tastes great I'm sticking to it.<br />
<br />
<ul>
<li>Mix the maida, water, an egg and salt into a medium consistency batter... not too thick nor to runny.</li>
<li>now use a medium sized pan to make 8-10 appams. Cook on both sides</li>
<li>This is going to be thin and soft.</li>
<li>Keep aside...</li>
</ul>

<b><u><i>Note:</i></u></b><i> One thing you must keep in mind is the pan u are finally going to put all this in should not be bigger or smaller than the size of the appam. </i><br />

Now what I did was I cooked this on my stove in my normal deep bottom sauce pan which I use to make curry. I first greased the pan with oil. Took my first appam and dipped it in a bowl with beaten egg+ salt. The appam should be fully coated with egg. This becomes the bottom-most layer. My appams were just the right size for the pan. On top of the appam I added the chicken mix. And then appam and so on till I used up all the appams. The left over chicken mix i stored in freezer to be used later. Whatever beaten egg was left over I poured over the top which seals up gaps between layers.<br />
Then I covered it up with its lid and let it cook for 5 minutes on high flame and then 10 minutes on low flame. Turned it over and cooked the other side too. You have to take cake not to burn this and also while turning in over...<br />

And there you have it, its done!! The above pics are of 2 different times I made them. In the last 2 pics I sprinkled some dried mint leaves powder on top...<br />

Roasted it in a pan with 1 tbsp oil, a little chilli powder, salt and chaat masala. <i>(If you want the yellow colour to it, add turmeric. Also adding curry leaves while roasting gives it a good flavour)</i>.<br />

<li>2 green chillys</li>
<li>3/4 cups grated coconut </li>
<li>Mustard seeds 1 tsp</li>
<li>Curry leaves</li>
<li>Salt to taste</li>
<li>Oil (<i>I used coconut</i>)</li>

<b><u><i>How to make</i></u></b>:<br />

<li>Soak the flowers in salt water for some 10-15 minutes and then wash it clean.</li>
<li>Grind the small onions, green chillies and coconut.</li>
<li>Heat oil in a pan add the mustard seeds. when its done spluttering add in the curry leaves. Wait for a few seconds and then add the ground mix of coconut, green chilly and onion. </li>
<li>Let that cook for a minute or 2 and then add in the flowers, salt and turmeric. Cook until done. </li>

<li>2 medium sized onion</li>
<li>2 green chilles finely chopped</li>
<li>1 tbsp chopped ginger</li>
<li>1.5 tbsp chopped garlic</li>
<li>4 eggs</li>
<li>1 tsp chilli powder</li>
<li>1/2 tsp turmeric</li>
<li>1/4 garam masala</li>
<li>1 tbsp chaat masala (optional. I love using this for almost everything)</li>
<li>some mint or coriander leaves for garnishing</li>
<li>salt to taste</li>
</ul>

<b><u>How to make:</u></b><br />
<br />
<ul>
<li>Wash and soak rice in water for about 20 minutes. Boil in water(add salt and a little oil). Drain when its almost done(3/4 cooked) and keep aside.</li>
<li>Hard boil the eggs while the rice is cooking. Keep aside. Peel when cool. Make long cuts on it making sure it remains whole.</li>
<li>Next heat oil in a pan, add chopped onions, cook for a minute or 2 and then add in the ginger-garlic and green chillies. Cook until the smell of garlic goes. Add chilli powder, turmeric powder, garam masala, salt and a little chaat masala. Let that cook for a minute and then add in the boiled eggs. </li>
<li>To let the eggs absorb the masala, let it stay in the pan on very low flame for some 5 minutes. Switch off flame. </li>
<li>Now take the eggs out and toss in the cooked rice. Let the masala mix well with the rice. Check taste. <i>Here I add salt, extra chaat malasa or even oil if I find the rice and masala too dry. I even add pepper powder if I feel its not spicy enough for my taste.</i> </li>
<li>Add the eggs. Garnish with coriander or mint leaves. Serve hot! :)</li>

This pudding is made by steaming so keep a pan or bowl or whatever you want to set the pudding in aside making sure it can withstand steaming.</div>

Heat it in a pan. Keep stirring until the mixture turns a dark golden brown. The caramel is ready. Take it off the flame and pour it into the dish you kept aside. Coat the bottom well. Give it a minute or 2 to set and pour in the bread-milk mixture. Place this bowl with in a pressure cooker or a deep bottom vessel for steaming. (Just do what you do when making idly). Steam for 25-30 minutes and check if the pudding has set. If not let it steam for a while longer. When its done take off flame and let it cool. Then refrigerator (minimum 2 hours is good) until you have to serve. </div>

I simply love this dessert. My husband loves it when I make it without the bread. I garnished it with some chopped pistachio. Gave it some lovely colours.<br />

Now I have noticed that covering the bowl of pudding before placing it inside the hot water vessel for steaming is not a good idea. I have made this once without covering and once covered with aluminium foil (poked some holes too for steam to escape). The covered one took a long time to cook and still the centre was a bit watery. You can see that in my pic. But the one I made without covering was well done. I guess it was the water dripping onto the pudding from the foil while steaming.<br />
The steaming vessel will be covered so no need to cover the bowl inside it too... got it?<br />

I was in Saudi for 2 weeks... had gone for a mini vacation to be with my parents and sisters. I thought I might be able to post from there, but sadly weather changes(sand storm for days on) made my kids sick (allergies :( ) and yet again the little time my baby slept I wanted to sleep too. <br />
Alhamdulillah we are getting back to routine now.<br />

<b><i>How to make:</i></b><br />

<li>Grind together grated coconut, small onions and dry red chilly. Don't grind into a paste.</li>
<li>In a pan heat 2 tbsp of coconut oil, add mustard seed, let it splutter. </li>
<li>Now add in the coconut-small onion-red chilly mix. Cook that for a minute or two until coconut starts changing colour to light brown. Add in the chopped cheera. Mix well. Add salt.</li>
<li>Cheera cooks very fast. Hardly 5 minutes so do take care. </li>

There were times when I used to get too excited with my turmeric and almost always add a bit too much... but those days are long back. Now I add the littlest possible. I was a bit reluctant to add mustard seeds to this coz I dont like seeing mustard seeds in anything... only chutneys and thoran's. But as I wasnt sure if lemon rice usually had mustard seed it in or if it was just a malayali thing. I had a neighbour back in Bahrah, Saudi Arabia, who used to put mustard seed in spaghetti. The spaghetti was yum, but I felt odd seeing mustard seed in it. She was an extremely caring lady from Thrissure... :)<br />

<b><i>Ingredients</i></b><br />

<li>2 cups basmati rice, washed and drained</li>
<li>1 big onion chopped</li>
<li>1 inch ginger chopped finely</li>
<li>2 green chillies</li>
<li>1tsp mustard seed</li>
<li>1/4 turmeric powder</li>
<li>2 tsp urud daal</li>
<li>2 tsp moong daal (the original recipe from Eliza said chana daal, but I had only moong daals)</li>
<li>6-7 roasted cashew nuts</li>
<li>7-8 curry leaves</li>
<li>3-4 tbsp oil (I used sunflower oil)</li>
<li>Juice of 2 lemon</li>
</ul>

<b><i>Directions to make: </i></b><br />

<li>Boil the basmati rice in water with salt and a tbsp oil. Drain when it is almost cooked. Dont let it fully cook or when they sit for a minute or 2 they'd become over-cooked (which is soo not what u would want for ur lemon rice)</li>
<li>Take a big pan, big enough to contain all the cooked rice, and heat oil in it. Add mustard seeds. Let it splutter. Add in the urud daal and moon daal. Roast for a minute or two until they turn a light shade of golden brown (Don't let it burn).</li>
<li>Add in the curry leaves and green chillies. Give that also a minute then add in the onions and ginger. Add salt and turmeric. Now cook this until the onions start turning slightly brown(That would take only a minute or 2). Add a few drops of water. Mix well. Switch off flame. Add rice. mix well. Check salt. Add lemon juice. Garnish with roasted cashews. </li>
<li>It's done!</li>

Now, I dont know if my opinion is coz I'm pregnant with my taste buds having a will of their own, but I didnt find it so '<i>wow</i>'. Don't put much stock in my food opinions these days. I have always been a chocolate and sweets lover... used to crave them when I was pregnant with Ayaan. But in this pregnancy I dont want any. But I sure can eat as much dahi batata puri as possible :D. <br />

I can have biryani for breakfast, lunch and dinner.. and even in the evening with tea :P I have had it that way when my mom used to make it back in Saudi :). I miss my mom's cooking. Especially her gravy chicken 65, which she makes in a yogurt gravy. Mouth-watering! Mine just never comes out as good as hers.<br />

<li style="font-style: normal;">I cut the beans into an approx of 1 inch length. Cooked it in the pressure cooker with a little water and salt for 2 whistles. Let it cool down placing it under cold running water.</li>
<li>Heat oil in a pan, add mustard seeds. When its done with the splutters add in the curry leave and red chilly. After a minute add in the chopped small onions. Cook until they start turning brown. Then add in the cooked beans. Check salt, mix well and <i>ur done</i>! :)</li>

I made a few changes from the way the vahchef made it. What he did was make a ball out of rice and then fill it with a mix of potato masala mix(what u wud make for veg cutlets). But my rice balls came out kinda sticky and so I just mixed everything up and made into balls...<br />

It's quite easy to make.<br />
<b><i>Here's what all you'll need:</i></b><br />

<li>Cooked Rice - 3 cups(Best to use basmati or ponni or those rice which u can mash easily)</li>
<li>Potatoes- 2 medium(Boiled and mashed)</li>
<li>Ginger garlic paste(or finely chopped) - 1 tbsp</li>
<li>Onion finely chopped - 1 big</li>
<li>Boneless chicken cut into small cubes - Half a cup</li>
<li>Red chilly powder - 2 tsp</li>
<li>Garam malasa - 1 tsp</li>
<li>Green chillies chopped finely - 2 or more depending on ur taste buds</li>
<li>Coriander leaves - a handful, chopped finely</li>
<li>Cumin seeds - 1 teaspoon</li>
<li>Oil for frying</li>
<li>Eggs - 1 big or more if u need</li>
<li>Bread Crumbs - How much ever u need</li>
<li>Salt to taste</li>

<b><i>Directions to make:</i></b><br />
<br />
<ul>
<li>Heat a tbsp oil in a pan add cumin seeds. Let it flutter for half a minute then add in the onions, green chillies. When the onion starts turning brown add in the ginger garlic paste. </li>
<li>Add red chilli powder and garam masala. Saute for a few minutes then add in the small bone-less pieces of chicken. Add salt and let that cook for 3-4 minutes. It doesnt take long.</li>
<li>Now add in the potatoes. Mix well and check salt. (<i>Squeeze in some lemon juice if u want</i>). Cook for a few minutes to make into a nice thick masala mix. Switch off flame.Keep aside.</li>
<li>In another bowl take the cooked rice, add coriander leaves and a little salt. Mix well. </li>
<li>Now make balls with the rice mixture.... and with the chicken-potato as the masala mix in the centre. (<i>While making this it all got too sticky for me and I just mixed it all up. Iftari time was drawing near.</i>)</li>
<li>Beat the egg into a bowl... and just how u would make a cutlet, dip the balls into the egg and coat with bread crumbs.</li>
<li>Deep fry in hot oil.</li>
<li>Enjoy!! :)</li>

They looked like small cucumbers to me and I had no clue what to do with them. As I didnt even know their name I couldn't search for a recipe. I was going to ask my husband but kept forgetting and they have been sitting in the refrigerator for 3 days until last night I remembered and asked. He said it was <i>'kovakka'</i> and was surprised I haven't had it before. </div>
While browsing thru google for a recipe I understood that this is made like any other thoran/upperi. Grated coconut, small onions and dry red chillies as the base grind mix.<br />

<li>Kovakka (Tindora / Ivy gourd). I had around 2 and half cups after I had chopped them.</li>
<li>6-7 small onions</li>
<li>4-5 tbsp grated coconut</li>
<li>2 dry red chillies</li>
<li>6-7 curry leaves</li>
<li>1 tsp cumin seeds</li>
<li>1/4 tsp turmeric powder</li>
<li>1 tsp mustard seed</li>
<li>2 tbsp coconut oil <i>(You can use any oil u want. All keralites love food cooked in coconut oil)</i></li>
<li>salt to taste</li>

<i><b>Directions to make:</b></i><br />

<li>Chop the tindora into the shape or size u want. Small size would mean it'd cook faster.</li>
<li>Grind together grated coconut, small onions and dry red chilly. Semi-grind. Don't grind into a paste.</li>
<li>In a pan heat 2 tbsp of coconut oil, add mustard seed, let it splutter. Add curry leaves. Then add cumin seeds let it splutter too for half a minute. </li>
<li>Now add in the coconut-small onion-red chilly mix. Cook that for a minute or two until coconut starts changing to light brown. Add in the chopped Ivy gourd. Mix well. Add salt and turmeric.</li>
<li>Cover and let this cook for 15-20 minutes on low flame. Add a little water so that it doesnt burn and stick to the pan. Dont add too much water and make into a paste. The thoran should be dry.</li>
<li>After 15 minutes check if its cooked according to ur way. <i>(I have noticed with thoran's some people like it almost cooked not fully. And some really want it fully cooked. So let this cook to the level u want.)</i> </li>

I have always preferred the Mandi rice to kabsa rice but a lot of people I've met seem to prefer the latter. <li>2-3 pieces of cinnamon stick</li>
<li>3 dried limes</li>
<li>3 bay leaves</li>
<li>4 cardamon </li>

<b><i>How to make:</i></b><br />
<ul>
<li>In a pressure cooker heat oil. Add in the chopped onions, ginger and garlic. Cook for a minute or two. Add in the chicken, tomatoes, all the spices and salt. Add 3 cups water. Cover and pressure cook on medium flame for 10-15 minutes or until 2 whistles or until u feel ur chicken is almost cooked but not fully cooked. Switch off stove.</li>
<li>Cook the Basmati rice with salt... not half way but almost half way cooked. Drain and rinse the rice with cold water so that it does not get fully cooked with the heat. </li>
<li>Open the pressure cooker once it has cooled down <i>(or if u want to open immediately without waiting for it to cool: Place the pressure cooker under cold running water. It'll cool the lid and you'll be able to open safely. I always do this)</i>. Check the amount of sauce. As the rice is a little cooked and the chicken almost cooked, there should be only about 1 cup sauce in the pressure cooker. Adjust by adding water or removing sauce accordingly. Now add the rice and cook for 10-12 minutes. </li>
<li>Switch off stove and place pressure cooker under cold running water and check rice and chicken. Make sure its not overcooked. </li>
<li>Garnish with some roasted cashew nuts.</li>
</ul>

It took me a few tries with mandi rice and kabsa rice to get this pressure cooker process proper. The water rice consistency. And the chicken too. The rice and chicken has to be just rightly cooked. I used to get the top layer well cooked and the rice near the chicken pieces a bit over cooked. But once I got the handle of it, its sooo much faster to use pressure cooker for making kabsa or mandi rice.</div>

<b><i>Ingredients:</i></b><br />

<li>2 cups basmati rice, washed and drained (The proportion of rice and water for ghee rice is 1:2. For each cup of rice u add 2 cups of water)</li>
<li>1 large onion, sliced thinly</li>
<li>3 cloves, 3 cardamons, 3 small pieces of cinnamon sticks</li>
<li>1 tbsp raisins(<i>I didnt put it in what I made right now. Just made it as fast as possible for Ayaan. He was being a bit short-tempered with me :P</i>) </li>
<li>A handful cashew nuts (<i>I didnt use this either</i>)</li>
<li>5-6 tbsp of sunflower oil (or ghee if that's what u want)</li>
<li>4 cups water</li>
<li>Salt to taste</li>
</ul>

<b><i>How to make:</i></b></div>

<li>Take a big saucepan add the oil and let it heat up. Add the cloves, cardamon and cinnamon and let it roast a minute then add the sliced onions.</li>
<li>Saute until they are about to turn brown. The onions should be cooked but <i>should not turn brown</i>. If they turn brown the whole ghee rice will get a brown colour.</li>
<li>Add the 4 cups of water. Add salt. </li>
<li>When water starts to boil add the 2 cups rice. I usually boil water in my electric kettle and use 4 cups from it. It's quicker than waiting for the water to boil.</li>
<li>Check salt. Put flame on simmer. Cover the saucepan with lid and let the rice cook. It will take some 10-15 minutes. Do check. Don't let it overcook and become a paste.</li>
<li>Roast the cashew nuts and raisins in a tbsp of oil and garnish before serving. </li>

<br />
<b><i>For making the poori you'll need:</i></b><br />
<ul>
<li>1 cup semolina (rava or sooji)</li>
<li>1 tbsp all purpose flour</li>
<li>a pinch of salt</li>
<li>warm water for mixing</li>
<li>oil</li>
</ul>
<b><i>How to make:</i></b><br />
<br />
<ul>
<li>Mix semolina and salt. Then add some warm water.. just enough water to make it a bit grainy...not a paste. So that wud be just 3-4 tbsp of warm water.</li>
<li>Now mix in the all purpose flour to make into a tight dough. Maida is added to absorb the moisture. If the dough is soft add a little more maida to tighten it.</li>
<li>Kneed the dough for some 5 minutes. Add a few drops of oil and kneed again.</li>
<li>Then let it rest for 15-20 minutes.</li>
</ul>
<ul>
<li>After you have let it rest for 20 minutes, roll the dough very thin to make round pooris. The thinner the better. My mom-in-law did this part, rolling it real thin. If its thin you'll get delicate crispy balls on frying and is much tastier than thick ones.</li>
<li>Use round cutter to get nice shapes... or u could use cap of bottle or anything small and round.</li>
<li>Fry them in a deep bottom vessel with hot oil.</li>
<li>Thats it. Quite easy... :)</li>

<li>3/4 cup of tamarind pulp (made this by soaking tamarind in water and sqeezing all the pulp out)</li>

<li>pepper powder </li>
<li>chilli powder</li>

What you have to note here is check before adding chilli powder and pepper... add if u really need it or it'd be a bit tooo spicy to ur taste. Same thing with salt and tamarind... check taste as u mix ingredients into the pani. Add chat masala if u have.. </div>

For the stuffing we made some fried potato cubes, some chole and finely chopped onions. Here you can add more items like a paste of chilli+yogurt+tamarind.. or chopped tomatoes.. whatever u want! :)<br />

This is just me putting all the spices and ingredients I like. It might not be the authentic chana masala recipe :)<br />
But it was yummy enough so I give u a 'go-ahead' to try my recipe without fear of having to throw it in the trash :P<br />

<b><i>What all you'll need:</i></b><br />

<li>1.5 cups chickpeas (soaked over night in water, then pressure cooked with a little turmeric and salt)</li>
<li>1 large onion, finely chopped</li>
<li>1 medium sized tomato, finely chopped</li>
<li>1/2 tsp chilli powder</li>
<li>1/4 tsp turmeric powder</li>
<li>1 tbsp chana masala powder(I use Shan chana masala)</li>
<li>2 green chillies </li>
<li>a handful coriander leaves, chopped</li>
<li>2 tbsp lemon juice (I like to add a lot more)</li>
<li>Salt to taste</li>
</ul>
<b><i>How to make:</i></b><br />
<ul>
<li>Heat oil in a frying pan. Add the chopped onions. Stir and cook until it start turning slightly brown</li>
<li>Add tomatoes and green chillies. Stir and add in chilli powder, turmeric powder, chana masala powder and salt.</li>
<li>Let it cook for at least 2-3 minutes and then add in the cooked chick peas. Mix and lower flame and let it simmer for another 5 minutes. </li>
<li>Add water if needed, dont let it burn. Switch off flame when u get thick gravy. </li>
<li>Add lemon juice and garnish with coriander leaves.</li>

It was ok. A bit sweet for my taste. I think it wud have been the chilly sauce I used. But it was a nice change from my normal cauliflower fry, kurma or curry. My son liked it. But then he likes all my cookings :)<br />

Here's what all you'll need:<br />

<li>Cauliflower florets (put it in hot water with salt to kill any germs in it) - 1 cup or 1 and 1/2 </li>
<li>Maida - 1/2 cup</li>
<li>Corn flour - 1/4 cup</li>
<li>Pepper powder - 1 tsp</li>
<li>Salt to taste</li>
<li>Soya sauce - 1 tsp</li>
</ul>

Make a batter with all of the above(except cauliflower) and coat the cauliflower with it.</div>

<li>Oil for frying</li>
</ul>

Heat oil in a pan. When oil is hot deep fry the batter coated florets until they turn crispy. Keep aside</div>

For making the sauce:</div>

<li>Ginger, finely chopped - 1/2 tsp </li>
<li>Garlic, finely chopped - 1/2 tsp</li>
<li>Green chillies, finely chopped - 1/2 tsp</li>
<li>1/2 a finely chopped onion</li>
<li>Capsicum - 1 small</li>
<li>Peppercorn crushed - 1/2 tsp</li>
<li>Soya sauce - 1/2 tsp</li>
<li>vinegar - 1 tbsp</li>
<li>a pinch of sugar</li>
<li>chilly paste - 1 tsp (I used chilly sauce coz I havent been able to get a good chilly paste as yet :(.. It makes a big difference.)</li>
<li>Coriander leaves for garnishing- a few or add more if u want (my husband loves coriander leaves)</li>
<li>Spring onions, finely chopped - 1 tbsp</li>
</ul>

Heat oil in a pan. Add ginger, garlic, green chillies, onion and sautee until raw garlic smell leaves.<br />
Lower flame. Add capsicum, salt, peppercorn, sugar, vinegar, chilly paste, soya sauce. Mix well.<br />
Give a minute or two and then add the fried cauliflowers into the sauce. Mix. Switch off flame.<br />
Garnish with coriander leave and spring onions. Serve hot :)<br />

<li>3 tbsp cornflour</li>
<li>2 tsp Chinese five-spice powder</li>
<li>100ml vegetable oil</li>
<li>1 red pepper, thinly sliced</li>
<li>2 red chilli, thinly sliced</li>
<li>4 spring onions, sliced, green and white parts separated</li>
<li>2 garlic cloves, crushed</li>
<li>2 inch ginger, cut into matchsticks</li>
<li>4 tbsp rice wine vinegar or white wine vinegar</li>
<li>1 tbsp soy sauce</li>
<li>2 tbsp sweet chilli sauce</li>
<li>2 tbsp tomato ketchup</li>
</ol>

Method </h3>

<li>Make sure to remove all water from the beef. </li>
<li>Toss the cornflour, beef and five-spice together in a bowl and mix well.</li>
<li>Heat the oil in a wok until hot, then add the beef and fry until golden and crisp. </li>
<li>Scoop out the beef and drain on kitchen paper. Pour away all but 1 tbsp oil.</li>
<li>Add the pepper, half the chilli, the white ends of the spring onions, garlic and ginger to the pan. </li>
<li>Stir-fry for 3 mins to soften, but donβt let the garlic and ginger burn. </li>
<li>Mix the vinegar, soy, chilli sauce and ketchup in a jug with 2 tbsp water, then pour over the veg. Bubble for 2 mins, then add the beef back to the pan and toss well to coat. </li>
<li>Scatter the remaining chilli and green parts of the spring onion on top.</li>
<li>Serve the beef on noodles or rice.</li>
</ol>

Note: This is not very spicy. So you can add more chilli if you need. </div>

I made it exactly like how I make a chicken curry, with less but thick gravy... with a touch of powdered dry mint leaves and pressure cooked potato cut into cubes.<br />

For the chicken filling I used:<br />
<ul>
<li>Boneless chicken</li>
<li>Big onions - 1</li>
<li>Tomatoes - 1</li>
<li>Green chilly - 1</li>
<li>3 to 4 Curry leaves chopped </li>
<li>Ginger-Garlic paste (make fresh with 4-5 cloves of garlic and an inch of ginger)</li>
<li>Pressure cooked potatoes.. cut into small cubes (Optional)</li>
<li>Garam masala - 1 tsp</li>
<li>Chilly powder - 1 tsp</li>
<li>Turmeric powder - 1 tsp</li>
<li>Coriander powder - 2 tsp</li>
<li>Pepper powder (Add if green chilly and chilly powder does not give u ur desired spicy level)</li>
<li>Coriander leaves</li>
<li>Fresh mint leaves or dry mint leaves powder</li>
<li>Salt to taste</li>
</ul>
How to make:<br />
<ul>
<li>Heat oil in a pan add chopped onion... sautee until they start turning brown..</li>
<li>Add ginger-garlic paste... cook until the raw smell of garlic goes</li>
<li>Add tomatoes, green chilly, chilly powder, turmeric powder, salt, coriander powder and chopped curry leaves.</li>
<li>Cook that until oil starts forming on the side... then add in the chicken... add pepper here if u want it more hot.</li>
<li>Cook the chicken well...boneless cubes of chicken dont take much time to cook.</li>
<li>Add cooked potato cubes.</li>
<li>Add in the coriander leaves and mint leaves</li>
<li>Switch off flame. The filling is ready.</li>
</ul>
Now the pathiri I made with:<br />

<li>2 cups roasted rice flour</li>
<li>2.5 cups water</li>
<li>salt to taste</li>
</ul>

Take a deep bottom vessel. Add the water and salt. Let the water come to boil. Lower flame and add in the rice flour. Mix well and keep covered for a minute or 2 on that low flame. Do make sure it doesnt get burnt at the bottom.<br />

Then comes the kneading. The dough will be hot so knead it with a spoon until it turns warm. Then knead with hand to make a really soft dough. </div>

Use a press to make round pathiris. </div>
<div>
Take a pathiri, put some of that chicken filling on top and then cover with another pathiri. </div>

Press the sides with a fork.</div>
<div>
Now u can either steam it or cook it on the skillet.</div>

I steamed all except 2 which i cooked on the skillet on hot flame. I liked it both ways. It took around 15 minutes to steam-cook it. The steamed ones look neat and tidy...</div>

Ingredients</h3>
<ol style="text-align: left;">
<li>Green Peas - 1 cup</li>
<li>Onions - 2 (minced)</li>
<li>Tomato - 1 (chopped)</li>
<li>Ginger Garlic paste - 2tsp</li>
<li>Green chillies - 2 (slit lengthwise)</li>
<li>Coriander powder - 2 tsp </li>
<li>Chilly powder - 1/2 tsp</li>
<li>Cumin powder - 1/4 tsp</li>
<li>Turmeric powder - 1/4 tsp</li>
<li>Garam masala - 1/2 tsp</li>
<li>Coconut milk - 1/2 cup</li>
<li>Curry leaves- a sprig</li>
<li>Oil - for sauting onions</li>
<li>Salt - to taste</li>
</ol>

Method</h3>

Cook peas with just enough salted water. If there is more water, the gravy will become too watery.<br />
<br />
While peas is getting cooked, heat oil in a pan and sautΓ© onions until golden brown.<br />
Add ginger-garlic paste, green chillies, curry leaves and the chopped tomatoes. Saute for few more minutes till tomatoes are cooked.<br />
<br />
Turn the heat to low and add coriander powder, chilly powder, jeera powder and turmeric powder. Saute till the aroma comes. Be careful not to burn the powders, otherwise the curry will taste bitter.<br />
<br />
Add the peas along with water in which it was cooked and combine. Simmer for 8-10 minutes until you see the oil separating and the gravy thickens. <br />
<br />
Add the coconut milk and simmer for one more minute.<br />
<br />
Your peas curry is ready! Serve with Chapatti, Appam or bread.<br />

<li>Cloves - 3-4</li>

<li>Sunflower oil/ Butter - 4-5 tbsp</li>
<li>Lemon juice - 1 tbsp</li>
<li>Chilly powder - 1 tsp</li>
<li>Turmeric powder -1 tsp</li>

Direction to make:<br />
<ul>
<li>Chop all the vegetables and keep aside.</li>
<li>Grind the garlic, ginger, green chillies and coriander leaves.. keep aside</li>
<li>In a heavy bottom vessel (which has a tight lid), heat the butter/oil and add the cardamon, cloves, cinnamon sticks. Saute for a few minutes, lower flame and add the onions.</li>
<li>When the onions start to turn brown add the ginger-garlic-coriander. Saute.</li>
<li>Add the red chilly powder, turmeric powder, garam masala and salt</li>
<li>Mix well. All these should be done on low flame so as not to burn them.</li>
<li>Now we add the vegetable. Between the carrots and beans, the beans take longer time to cook, so I added that first. Let it cook for a minute then added the carrot. Let that also cook for a minute. Then I added the cooked chick peas and green peas.</li>
<li>Now turn up the flames and add 4 cups of water. Use the same cup u used for measuring rice. If ur taking 2 cups rice, u need to take 4 cups water. The ratio is 1:2. </li>
<li>Add the lemon juice and rice. Mix well. Check salt. Cover with lid. Lower flame.</li>
<li>Check after 10-15 minutes. I didnt check the exact timings, so can't say if it took more than that to cook. Do check the rice and dont let it go mushy.</li>

<i>Ingredients</i></h3>
<ol style="text-align: left;">
<li>Fish - Β½ kg</li>
<li>Onion β 2 thinly sliced</li>
<li>Ginger β1 inch</li>
<li>Garlic β5 - 6 cloves</li>
<li>Green chilli β 3 β 4</li>
<li>Cloves β 6</li>
<li>Cinnamon β 2 stick</li>
<li>Cardamom β 5</li>
<li>Bay leaves - 2 </li>
<li>Tomato β 2-3</li>
<li>Coconut milk β 2 cups</li>
<li>Oil β enough to shallow fry fish</li>
<li>Mustard Seeds β1 tsp</li>
<li>Curry leaves β a hand full</li>
<li>Salt β to taste</li>
</ol>

<i>For Marination</i></h3>
<ol style="text-align: left;">
<li>Turmeric powder β Β½ tsp</li>
<li>Pepper powder β 1 tsp</li>
<li>Lemon juice β Β½ lemon (optional)</li>
<li>Salt - to taste</li>
</ol>
<h3 style="text-align: left;">
<i>Method</i></h3>
<ol style="text-align: left;">
<li>Marinate the fish pieces with turmeric powder, pepper powder, salt & lemon juice and keep aside for 1 hour.</li>
<li>Meanwhile prepare all the other ingredients. </li>
<li>Shallow fry the marinated fish till they are half done.</li>
<li>Heat oil in a pan and splutter the mustard seeds.</li>
<li>Make sure that the heat is on medium and add the cloves, cinnamon, cardamom and bay-leaves and fry for few seconds.</li>
<li>Add ginger and garlic and fry for a min.</li>
<li>Now add onions and green chillies.</li>
<li>After few minutes add the tomatoes and saute for few more minutes.</li>
<li>Once the tomatoes becomes soft add coconut milk and salt. Let it boil.</li>
<li>Add the fried fish pieces and cook till they are done.</li>
<li>Serve hot with <a href="http://coloursofourworld.blogspot.ae/2013/01/breakfast-today.html" target="_blank"><span style="color: #38761d;">Palappam</span> </a>or bread.</li>
