This is one of the best Nadan Chicken roast I have made. If you can make this in a clay pot, even better!
INGREDIENTS
* * Again you can adjust the chilli and masala level according to your taste. Be careful not to burn.
INGREDIENTS
- Chicken - 1 kg
- Onion 4-5 *
- Ginger - 2 inch piece
- Garlic - 8-9
- Curry Leaves - few
- Salt - According to taste
- Water - 1 cup - only if you need gravy
- Oil - 2- 3 tbsp
- Chilli powder - 1 tsp
- Pepper - 1 tsp
- Coriander powder - 2 tsp
- Garam masala - 2 tsp
- Turmeric Powder - 1/4 tsp
- Cut the chicken into small pieces.
- Dry roast all the ingredients under roast and mix well with the chicken pieces. Keep aside for 1-2 hrs.
- Now slice the onion, ginger and garlic into small pieces.
- Heat oil in a pan and sauté the onion, ginger and garlic till dark brown. Be careful not to burn them.
- Now add curry leaves and sauté for few more seconds
- Now add the chicken mix to the onion mix.
- Add salt and water if you need more gravy
- Adding a little salt to the onion will reduce the sauté time.
- If you have time, slow cook the chicken.
