In my quest to find a way to bring more veggies to our diet, I thought of making one of my mom's old recipe. She puts omelet at the end to the curry.

- Vendakka - 1 cup
- Garam masala - 1 tsp
- Onion - 1/2
- Curry Leaves
- Ginger - 1/2 inch
- Garlic - 2
- Thin coconut milk - 1/2 cup
- Thick coconut milk - 1/2 cup
- Chilli Powder - 1/2 tsp
- Turmeric Powder - 1/4 tsp
- Cashew nut - 10 (optional)
- Oil - 2 - 3 tbsp
- Salt - to taste
PREPARATION
- Heat half Oil in a pan and fry Okra for a few minutes. Remove from the pan and keep aside.
- In the same pan heat the rest of the oil and sauté onion, ginger , garlic and curry leaves for few minutes. Be careful not to let the onion turn brown.
- Now add chilli powder, turmeric powder and garam masala and sauté for few minutes.
- Now add okra, salt and thin coconut milk and cook for few minutes.
- If you are adding cashew, grind it with thick coconut milk and add to the curry. Cook for few more minutes and your curry is done!
I've never used cashews with any curry... have read that it makes the curry more creamy... will try this out soon :)
